What is Mizutaki?

Hakata chicken stew is cooked in whitish broth made of chicken bones, simmered 4 to 5 hours and flavored simply with carefully selected rock salt. The stew is made with chicken meat, chicken meatballs, and vegetables. The soup may look bland but its deep, rich taste can be enjoyed with beer or sake. We also recommend an order of chanpon noodles for any leftover soup you may have.

How to order & eat HAKATA MIZUTAKI (CHICKEN STEW):
Reservation is required one day prior due to the preparation. The order of Hakata Mizutaki must be made.

1. Decide the amount (minimum of two orders). We recommend ordering less than the actual number of people in your party. The order for Hakata Mizutaki does not reflect individual portions, but can contain up to 4 servings per stew pot. It's best to discuss your portion requirements with your servers who can help you decide how much you would like to have. But it's so good, you might want more.

Suggestions for serving size:
2-3 persons: 2 orders in 1 pot
4-5 persons: 3-4 orders in 1 pot
6-8 persons: 5-6 orders in 2 pot

2. Take some of the ingredients from the pot and add the chicken broth into your bowl.

3. Add spices to your taste
- Ara shio (sea salt)
- Green Onions
- Momiji Oroshi (grated raddish with red chilies)
- Ponzu
- Yuzu Gosho
